Elderflowers

We are so fortunate to live in Saughall with easy access to many hedgerows and it seems a shame not to make use of the many offerings we are provided with for free.
The elderflowers have been much later this year due to the cold Spring but they are still flowering at the moment.
Elderflower cordial is easy and quick to make. Try this recipe from Mary Berry. I find that this recipe makes about 2 litres of cordial.

It goes with out saying, but only forage if you know you can identify something with 100% certainty and don't collect from private land without asking first.
